PUMPKIN ROLL 
CAKE:

3 eggs, slightly beaten
2/3 c. pumpkin
1 c. sugar
1 tsp. cinnamon
1 tsp. baking soda
3/4 c. flour

FILLING:

8 oz. cream cheese
4 tbsp. butter
1 c. confectioners sugar
1/2 tsp. vanilla
1/2 c. chopped nuts (optional)

Blend cake ingredients well. Spread in jelly roll pan that has been greased (bottom only) and lined with wax paper. Bake at 375 degrees for 15 minutes. Turn out on linen towel sprinkled with confectioners sugar. Roll jelly roll fashion and allow to cool. Unroll and spread with combined filling ingredients and roll again. Chill.
