TWICE BAKED POTATOES | |
6 baking potatoes 2 tbsp. butter 1 tbsp. fresh chopped chives or scallions 1 tsp. minced garlic 1/2 c. milk 1 tbsp. fresh chopped parsley 1/2 tsp. salt 1/8 tsp. pepper Preheat oven to 400°F. Bake potatoes on rack until tender, about 1 hour. Cool for 5 minutes. Reduce oven temp. to 350°F. Horizontally cut off top third of each potato. Scoop out cooked potato, leaving 1/2 inch thick shell. In small skillet melt butter over medium heat. Add chives and garlic; cook until garlic softens, about 2 minutes. In large bowl mash cooked potato with garlic mixture, milk, parsley, salt and pepper until combined. Spoon or pipe mixture back into potato shells. Return to oven, bake until potatoes are browned and heated through, about 15 minutes. |
