SPLIT PEA SOUP 
1 lb. yellow peas
Ham bone plus some meat
1 sm. onion, diced
4 carrots, sliced or diced
Salt & pepper to taste
Oxtail may be used instead of ham

Start with 3 quarts of water and combine peas, meat and simmer 45 minutes. Then add carrots and simmer until carrots are tender and peas are almost mush. If too thick add more water.
