ITALIAN CHICKEN STEW 
Chicken Breast, boneless, cut into fingers
Salt
Lemon Pepper
15 oz. Del Monte Tomatoes w/basil, garlic & oregano
Carrots, sliced
Potatoes, sliced thin

Sprinkle salt and lemon pepper on chicken fingers and brown in a little oil in pan on stove top (just a few minutes). Add carrots, potatoes, and tomatoes; salt & pepper to taste. Put in oven at 350°F, without lid, for about 15-20 minutes. Then cover and cook until done, approximately 45 minutes to 1 hour.
