PUFFED FISH FILLETS | |
3/4 lb. flounder or sole fillets 2 c. peanut or corn oil MARINADE: 1 tsp. kosher salt 1/8 tsp. white pepper 1 tsp. dry sherry BATTER: 3/4 c. flour 2 tsp. baking powder 3/4 c. water Cut fillets into 2 x 1 inch strips. Combine marinade ingredients, mix well, add to fish strips and put aside in the refrigerator. Mix together the flour and the water until smooth. Add the baking powder. Mix again and set aside. Heat the oil in a deep fryer. Add 1 tablespoon of warm oil to the batter and mix it again. Add the fish strips to the batter and coat well. Fry the fish until golden brown on both sides. Serve hot. Serves 4. |
