1 c. Bisquick
1/4 c. milk
2 eggs
1/4 c. chopped onion
1 pkg. frozen spinach, squeeze out excess water
1/2 c. Parmesan cheese, grated
4 oz. Monterey Jack cheese
1 (8 oz.) carton cottage cheese
1/2 tsp. salt
2 cloves garlic
2 eggs

Grease 9x9 inch baking dish. Mix Bisquick, milk, 2 eggs, and onion. Beat 20 strokes and spread in the bottom of dish. Mix the rest of the ingredients and spread on top. Bake at 350 degrees for 45-60 minutes.
