PIONEER BREAD 
1 pkg. yeast
3/4 c. warm water
3 tbsp. sugar
2 tsp. salt
1 egg
2 tbsp. shortening
1/3 c. yellow cornmeal
2-2 1/2 c. flour
butter, softened
Cornmeal

Dissolve the yeast in 3/4 cup warm water. Mix sugar, salt, egg, shortening and 1 cup of flour. Beat 1/2 minute on low speed. Beat 2 minutes on medium speed. Add more flour - enough to make dough easy to handle. Knead for about 5 minutes. Place in lightly greased bowl; turn dough over. Let rise 1-1 1/2 hours. Punch down.

Make into 1 loaf, folding sides under. Brush top with butter. Sprinkle with a little cornmeal. Put into a greased loaf pan. Let rise in a warm place 50-60 minutes. Bake in a preheated 400 degree oven for 25-30 minutes (a little longer if baking 2 loaves). Yield: 1 loaf.
