Dice eggplant and parboil for 8 minutes. Break 1 egg into bowl and beat well. After draining the cooked eggplant, mix with beaten egg until it is coated. Add salt; melt butter in a frying pan and place the eggplant in pan. Cook over low heat until golden brown.
