SWEET POTATO MUFFINS 
1/4 c. shortening
1/2 c. brown sugar
1 egg
3/4 c. cooked and mashed sweet potatoes
1 3/4 c. plain flour
2 tsp. baking powder
1 tsp. salt
3/4 c. milk
1 tsp. cinnamon
1/2 c. nuts

Cream shortening and brown sugar. Add egg and beat well. Add mashed potatoes, flour, salt, baking powder, milk and vanilla. Beat well, cinnamon and nuts optional. Bake at 350 degrees for 25-30 minutes.
