MOM'S MINCE MEAT COOKIES 
1 c. shortening
1 1/2 c. sugar
3 eggs, beaten
1 (9 oz.) pkg. mince meat
3 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt

Preheat oven at 400 degrees. In a large mixing bowl cream shortening and sugar. Add eggs and beat until smooth. Sift together flour, soda and salt. Gradually add to creamed mixture. Crumble and mix mince meat into dough.

Drop from teaspoon about 2 inches apart onto greased cookie sheet. (Mom always mashed each cookie with a fork to make them flat and a little more crispy.) Bake 10-12 minutes or until light brown. Always a Christmas must at our house! Pecans can be added if desired.
