EASY GEFILTE FISH 
5 lg. eggs, slightly beaten
1/2 c. matzo meal
Salt & pepper to taste

Mix above and put into the refrigerator for 1 hour. 2 cans white tuna, drained & mashed (6 1/2 to 7 oz. cans) 1 lg. onion, grated

Mix by hand the fish mixture with the matzo meal mixture. Put onion and celery in the bottom of a 3 quart pot. Make the fish mixture into small-medium sized balls. Layer this on top of onions and celery. Layer more fish mixture and then celery and onions again. Put sliced carrots on top. Add salt and pepper. Pour boiling water on top of all. Cook, covered for 1 to 1 1/2 hours on medium heat after bringing it to a boil.
