DATE AND NUT BARS | |
1 lb. pitted dates, chopped 2 tbsp. butter 1 tsp. salt 2 1/2 c. unbleached flour 2 tsp. vanilla 2 c. boiling water 2 c. sugar, 1/2 white & 1/2 brown 2 tsp. baking soda 2 beaten eggs 1 c. nuts, chopped Cover pitted dates boiling water and butter. Stir to melt butter; cover, let cool. Mix together sugar, salt, baking soda and flour. Stir in nuts. Add eggs and vanilla to the date mixture and then add to the dry ingredients. Mix well. Batter will be thin. Pour into a well greased jelly roll pan (11 x 15 x 1 inch) or two 13 x 9 x 1 1/2 inch pans. Bake in 350 degree oven, about 25-30 minutes. Cool in pan(s) on rack. Cut into desired size bars (tea size: 1 x 1 1/2 inches approximately 112 bars). Store covered in refrigerator. May be frozen. Before serving, sprinkle with 10X sugar. |
