BOW-TIE PASTA WITH CHICKEN AND BROCCOLI | |
8 oz bow-tie pasta 3 cups broccoli florets 4 boneless, skinless chicken breasts 1 tsp Adobo seasoning 2 tbsp olive oil 1 minced garlic clove 1/4 cup light mayonnaise 2 tbsp fresh grated Parmesan cheese Cook pasta as directed, adding broccoli during the last 5 minutes, drain and return to pot. In a bowl, combine chicken and Adobo seasoning, tossing to coat. In a large skillet over med-high heat, add oil and garlic; cook for 30 seconds. Add chicken, cook for 4 minutes per side or until browned on both sides. Add chicken to pasta and broccoli. Stir in mayonnaise and pepper. Cook over low heat until heated through.
