TABOULEH SALAD 
1/2 c. cracked wheat (Bulghar)
4 bunches parsley
1 green pepper
1 cucumber
1 bunch green onions
4 tomatoes
1/2 c. mint (dry) or a bunch of fresh mint
1 fresh lemon
1/3 c. olive oil
2 tsp. salt
1/4 tsp. black pepper

Bulghar can be purchased at Middle Eastern stores or at food co-ops.

Soak the wheat before hand, drain off excessive water and set aside while cutting the vegetables. Chop all green very fine and put into a large bowl. Dice tomatoes and add remaining ingredients and mix well. Set aside to allow the wheat to soak with the dressing and other ingredients. Place in refrigerator until serving.
