IMPERIAL CHICKEN - RICE 
2 broiler fryer chicken breasts, skinned, boned, cut in 1 inch cubes
1/2 c. peanut or sesame oil
3 cloves garlic, minced
1/2 c. finely chopped cashews
1 c. thinly sliced mushrooms
1/2 tsp. seasoned salt
1/4 tsp. crushed red pepper
1 c. uncooked rice
10 oz. pkg. frozen chopped broccoli, thawed, uncooked
3 c. chicken broth
1/2 c. grated Parmesan cheese
2 c. bean sprouts
12 tiny cherry tomatoes

Have all ingredients prepared and ready to stir fry. Using a wok or electric fry pan, heat oil over medium heat, stir fry chicken one minute. Put aside. Stir fry garlic, nuts, mushrooms and seasonings for one minute, put aside. Add rice, stir fry till light golden color. Mix in the previously stir fried ingredients, add broccoli, stir fry one minute. Reduce temperature to low, add hot broth, stir well. Cover, let cook till contents are tender. Place on warmed platter. Sprinkle with cheese. Garnish with sprouts and cherry tomatoes. Serves 4.
