JO'S WHOLE WHEAT BREAD 
2 1/4 c. very warm water
2 pkgs. active dry yeast
1/3 c. honey
4 tsp. salt
1/3 c. instant non fat dry milk (in dry form)
1/3 c. butter, room temp., or vegetable oil
2 c. all purpose flour
5-6 c. whole wheat flour

Combine water, yeast and honey in a large mixing bowl, let stand 2 minutes. Stir in salt and dry milk. Add butter, all purpose flour and 2 cups of the whole wheat flour, mix and beat 2 minutes. Stir in enough whole wheat flour to make soft dough. Turn out dough on well floured surface. (I use whole wheat flour) and knead for 5 minutes until smooth and elastic, adding only as much flour as needed to prevent dough from sticking.

Place dough in a heavily greased bowl, turn once to bring greased side up. Cover and let rise in warm place until double in volume, about 1 to 1 1/2 hours. Grease two loaf pans.

Punch down dough, turn out onto a floured surface and cut in half. Shape each piece into a loaf and place in prepared pans. Cover and let rise in a warm place until almost double in volume. Bake at 400 degrees for 35 to 40 minutes. Cool loaves on wire rack.
