CARROT SALAD 
2 lb. carrots, peeled and grated or shredded finely
1 c. raisins
1 (20 oz.) can crushed pineapple, drained well
3/4 c. mayonnaise, or to correct consistency

Mix together. If you want it sweeter, use pineapple packed in syrup, or add sugar, to taste. If avoiding sugar, use pineapple packed in its own juice, adding Nutrasweet for desired taste.

This is a big salad, for a group.

VARIATIONS: Add some miniature marshmallows, or shredded coconut.
