JEAN'S FISH FILLETS 
2 tbsp. butter
12 oz. flounder fillets, about 1/4" thick, cut into serving pieces
1 tsp. salt
Pepper
2 tbsp. chopped onion
2 tbsp. snipped fresh parsley
1 med. tomato, seeded & chopped
1/4 tsp. dried basil leaves, optional
1/4 c. shredded Cheddar cheese
1/4 c. shredded Swiss cheese

Place butter in 10 inch square casserole. Microwave at high for 45 seconds to 1 minute, or until butter melts. Add flounder, turning to coat both sides. Arrange flounder with thickest portions towards outside of casserole. Sprinkle with salt, pepper, onion, parsley, tomato and basil. Cover.

Reduce power to 70% (medium high). Microwave for 9-13 minutes, or until fish in center flakes easily with fork, rotating casserole once or twice. Top with cheese. Recover. Microwave at high for 45-60 seconds, or until cheese melts. Let stand, covered, for 2 minutes. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
