RHUBARB MUFFINS 
1 1/4 c. brown sugar
1/2 c. oil
1 egg
1 tsp. salt
2 tsp. vanilla
1 1/2 c. rhubarb
1 1/2 c. buttermilk
1 tsp. baking soda
2 1/2 c. flour
1 tsp. baking powder

1/3 c. sugar
1 tsp. butter
1/4 tsp. cinnamon

Bake 20 minutes at 350 degrees. Makes 24 muffins.
