APPLE CAKE 
CAKE:

1 1/2 c. oil
2 c. sugar
3 eggs
3 c. flour (unsifted)
1 tsp. baking soda
1 tsp. salt
1 tsp. orange peel (grated)
3 c. apples (diced, unpeeled)
1 c. chopped walnuts

GLAZE:

1 c. confectioners sugar
1 1/2 tsp. butter, softened
1 tsp. orange peel, grated
2/3 tbsp. orange jucie
1 tbsp. light corn syrup

Beat oil and sugar for 1 minute at medium speed. Add eggs and beat another minute. In a separate bowl, combine flour, baking soda, and salt. Add to oil mixture and beat until well combined. Add remaining ingredients and blend. (Mixture will be very thick.)

Pour batter into 12-cup Bundt or 10-inch tube pan that is greased and floured. Bake at 350 degrees for 1 hour 15 minutes. Do toothpick test for doneness. Cool cake before glazing.
