SCALLOPED POTATOES 
3 tbsp. butter
2 tbsp. flour
1 1 2/tsp. salt
1/8 tsp. pepper
2 1/2 c. milk
6 med. potatoes, pared & thinly sliced
2 tbsp. chopped onion
1/4 c. grated cheese

Combine first 4 ingredients in saucepan. Add milk gradually to make white sauce. Put half of the potatoes in greased 2 quart casserole. Cover with half onion and half of the sauce. Repeat layers. Cover and bake at 350 degrees about 1 hour, uncovered. Sprinkle with cheese and bake 30 minutes longer.
