CHEESY LEMON MOLD 
1 sm. (3 oz.) pkg. lemon Jello
1 c. boiling water
1 (6 oz.) can orange juice concentrate, undiluted
1 (8 oz.) pkg. cream cheese
1 c. flaked coconut (optional)
1 c. grated carrots
1 sm. can (8 oz.) crushed pineapple, undrained

Dissolve gelatin in boiling water. Stir in orange juice. Beat cream cheese until smooth. Gradually add gelatin mixture, beating until smooth. Stir in remaining ingredients. Pour into lightly oiled 6 cup mold.
