WALDORF SALAD 
3 med. apples, unpeeled and diced
1/2 c. sliced celery
1/4 c. raisins
1/2 c. low-calorie mayonnaise substitute
1 tbsp. lemon juice

Combine apple, celery, and raisins in a medium bowl. Combine low-calorie mayonnaise substitute and lemon juice, stirring well to blend. Add to fruit mixture, and toss lightly to coat well. Cover and refrigerate until thoroughly chilled.

Yield 5 servings. Amount 1 cup. Exchange: 1 fruit and 1 fat. 98 calories.
