KATE'S POTATO CASSEROLE 
2 lb. frozen shredded hash browns
1 1/2 tsp. salt
1/2 c. butter, melted
2 tbsp. dried minced onions
1/2 tsp. pepper
1 (10 oz.) can cream soup (potato, celery, chicken, or mushroom)
2 c. sour cream
2 c. Cheddar cheese, grated
1/2 c. bacon (optional)
Sprinkle parsley

Thaw potatoes. Mix all ingredients except cheese for top. Bake 40 - 60 minutes at 350 degrees uncovered. Can make ahead and refrigerate.
