WEST TEXAS CORN BREAD | |
1 c. cornmeal 1 c. (4 oz.) shredded cheddar cheese 1 c. sour cream 1 can (4 oz.) chopped green chilies OR 8 oz. jalapeno peppers 1 tbsp. baking powder 2 eggs 1/2 c. salad oil 1 can (8 oz.) cream style corn Grease 12-cup bundt pan. Heat oven to 400 degrees. Combine cornmeal, baking powder and cheese. In another bowl mix eggs, oil, sour cream, corn and chilies (jalapeno peppers). Add wet ingredients to dry and stir until moist. Spoon into pan. Bake 40 to 50 minutes. Let stand 10 minutes and remove. |
