SOY - HONEY GLAZED SPARERIBS 
4 lb. lean spareribs

MARINADE:

1/4 c. soy sauce
1/4 c. honey
1/3 c. lemon juice
1/2 tsp. ginger
1/2 tsp. dry mustard
1/4 tsp. mace
1/4 tsp. cloves
1/4 tsp. salt
2 tbsp. sherry

Combine marinade, mix well. Pour over spareribs and refrigerate, covered, overnight. Next day, cut a piece of heavy duty foil 18 x 80 inches. Place spareribs in center of foil and pour marinade over them. Fold long and short sides of foil and seal securely. Place foil package, seam side down in center of another 18 x 30 inch rectangle of heavy duty foil. Wrap package again and secure.

Adjust grill 4 inches from prepared coals and place package on grill. Grill 30 minutes. Turn package and grill 30 minutes longer. Remove spareribs from foil and place directly on grill. Raise grill 2 inches and grill 5 minutes on each side, or until golden brown. To cook indoors, roast at 350 degrees for 1 1/2 hours. Brush frequently with marinade and turn occasionally.
