SEAFOOD QUICHE 
1/2 c. chopped onion
2 tbsp. butter
3 beaten eggs
3/4 c. heavy cream
3/4 c. whole milk
1/2 tsp. salt
1 tsp. grated lemon peel
1/2 tsp. nutmeg
1 lb. sea legs, flaked
1 1/2 c. grated Swiss cheese
1 tbsp. flour
Sliced almonds

Saute onion in butter. Stir together eggs, cream, milk, salt, lemon peel, nutmeg, and onion. Add sea legs, cheese, and flour. Bake in unbaked pie shell at 450 degrees for 10 minutes then at 325 degrees for 35 minutes. Top with almonds before baking.
