FILLET BATTER 
1 beaten egg
1 tsp. salt
1 tsp. sugar
1/2 c. water
1/2 c. flour

Combine egg, salt, and sugar. Add water and flour. Beat. Dip fish fillet in batter and fry. Simple but really good. Usually has to be doubled or tripled depending on amount of fish to fry. Fry in frying pan with generous amount of oil.
