EASY-FIX ORIENTAL SOUP 
1 pkg. Ramen soup, chicken flavor
1/4 c. chopped celery
1 c. chopped lettuce
2 tbsp. onion, chopped
1 med. carrot
3 c. water
1 egg, optional
Chopped tofu, optional

Using the point of a knife, poke a small hole or two in the soup package. Then, placing the package on a table or countertop, use the heel of your hand to crush the package repeatedly to break the noodles into pieces. If done carefully, the noodles are broken without making a mess all over the kitchen floor! Peel the carrot and grate using the large holes in the grate. In 3 quart saucepan, bring water to boil and add carrots. Simmer 1 minute, add onion and celery, noodles and lettuce, and continue simmering. As soon as noodles are cooked, add seasoning package from soup mix and serve.

As a variation and for extra nutrition, add either 1 chopped hard cooked egg, or before adding noodles, stir in one raw egg, slightly beaten. I have also used Chinese cabbage, bok choy, fresh spinach and other green leaf vegetable. Try your favorite and create your own special version.
