WATERMELON STARS 
10 c. water
1/2 c. salt (pickling)
6 1/2 c. sugar
2 c. white vinegar
1 c. water
6 cinnamon sticks
1 lemon, cut in slices
1/4 tsp. allspice

Cut green and red off watermelon rind. Cube and soak overnight in 10 cups water and 1/2 cup salt. Wash thoroughly and drain. Put in clear water and cook until clear. Combine remaining ingredients and bring to boil. Pour over rind and boil one hour then seal in jars. The syrup may be colored red or green by adding food color.
