DARK CHOCOLATE MOUSSE (FOR A
CROWD)
 
30 lb. whipping cream
15 lb. chocolate chips
2 lb. salad oil
3 lb. 8 oz. granulated sugar
4 lb. egg whites
1 lb. egg yolks

Whip cream to peaks and set aside. Melt chocolate with oil and set aside. Combine the egg whites with the sugar and make a thick meringue. Mix the melted chocolate into the egg yolks. Add the meringue. Finally fold in the whipped cream. Pour the mousse into a pan. Wrap and keep refrigerated.
