WAHOO ITALIANO 
2 lb. Wahoo (or any non oily white fish)
2 lb. white potatoes (1/2 inch sliced and parboiled/half cooked)
butter
Bread crumbs
Garlic powder
Oregano
Salt
Olive oil

Cut fish approximately 1/2 inch thick by 1 1/2 inch or 2 inch pieces. Spread out on a cookie sheet leaving approximately 2 inches between pieces. Place a small pad of butter on each piece. Bake 20 minutes in a 325 degree oven.

Remove cookie sheet from the oven and place 1/2 inch thick slices of the parboiled potatoes between the pieces of fish. Sprinkle bread crumbs over the fish and potatoes until they are lightly covered. Season the entire tray with a dusting of salt, garlic powder and ground oregano.

Sprinkle a light coating of olive oil over the entire tray; return tray to a 350 degree oven and bake for 25 minutes or until bread crumbs are browned. Remove from oven and place on a serving platter. Serve immediately. Serves 4.
