CREAM OF POTATO SOUP 
6 c. peeled & sliced potatoes
1/2 c. sliced carrots
8 slices bacon
1 c. chopped celery
3/4 c. chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
2 tbsp. cream
Finely shredded cheddar cheese

Cook potatoes and carrots in boiling water until tender. Drain. Saute bacon until crisp. Drain and crumble. Saute onion and celery in 2 tablespoons bacon fat until tender, not brown. Combine potatoes, celery, onion, carrots, bacon, salt, pepper, milk and cream. Simmer 30 minutes, don't boil. Garnish with cheese.
