SWEET BUNS 
5 lbs. flour
6 c. milk
3 cakes yeast
1 1/2 c. sugar
3 tsp. ground cardamom
1 lb. butter
2 tsp. salt
Sm. currants to suit taste

Dissolve yeast in small amount of milk and flour and let rise until spongy. Heat milk until lukewarm. Add sugar, butter and yeast mixture. Sift flour with cardamom and add. Cover with towel and allow to rise in warm place. When doubled in bulk, form into buns. Place on greased baking sheets over light steam for rising, while covered. When spongy, brown quickly in 375 degree oven.
