ZUCCHINI CREOLE 
4-5 sm. squash, unpeeled, slice thin
3 tbsp. melted butter
3 tbsp. flour
1 tbsp. brown sugar
1 tsp. salt
1/2 bay leaf
2 whole cloves
3 lg. tomatoes, peeled and chopped or 2 c. canned
1 sm. green pepper, chopped
1 sm. onion, chopped

Place squash in greased baking dish. Make sauce of butter, flour, brown sugar, salt, bay leaf, and cloves. Add tomatoes, green pepper, and onion. Cook 5 minutes. Pour sauce over squash. Top with bread crumbs; dot with butter or grated cheese. Bake at 350 degrees for 40 minutes.
