SALMON CASSEROLE 
1 onion, chopped
2 c. mushrooms, sliced
2 tbsp. butter
3 tbsp. flour
1 1/4 c. milk
1 tsp. dill weed
1/4 tsp. nutmeg
1 (15 1/2 oz.) can salmon
1 (10 oz.) pkg. spinach
1 c. macaroni
1/3 c. sliced almonds
1/4 c. Parmesan

Saute onion and mushrooms in butter. Blend in flour, stir in milk, dill and nutmeg. Cook until mixture thickens. Cook and drain macaroni. Fold drained, flaked salmon, cooked macaroni, thawed chopped spinach and sliced almonds into creamed mixture. Pour into a 2-quart baking dish, sprinkle with cheese and bake at 350 degrees for 30 minutes.
