SLICED BAKED POTATOES 
4 med. baking potatoes with skin on
1 tsp. salt
2-3 tbsp. butter, melted
2-3 tbsp. chopped parsley
Fresh chives or 2-3 tsp. dried parsley and chives
4 tbsp. grated cheddar cheese
1 1/2 tbsp. Parmesan cheese

Wash potatoes; cut potatoes in thin slices, not all the way through. Use a wooden spoon to prevent knife from cutting all the way through the potato. Put potatoes in a baking dish and fan slightly. Sprinkle with salt and drizzle butter over potatoes. Sprinkle with herbs. Bake at 425 degrees for 50 minutes. Remove and sprinkle with cheese and bake 10-15 minutes more.
