CHICKEN BAKED WITH VEGETABLES | |
2 whole chicken breasts, skinned, boned (opt.) 1 lg. onion, sliced 1 lg. green pepper 2 lg. or 4 med. potatoes, peeled & quartered and sliced 8-12 oz. mushrooms, washed and sliced Pepper to taste Salt (opt.) 1 c. V-8 juice or 4 ripe tomatoes, sliced 1 tbsp. chopped parsley Rinse chicken and pat dry. Place in greased casserole. Sprinkle each layer lightly with salt and pepper. (I use Mrs. Dash seasoning blends, celery seed and lemon pepper instead of salt.) Top chicken with onions, green pepper, then potatoes and mushrooms. (I have added quartered carrots, too.) Add V-8 juice (or top with ripe tomatoes, chopped parsley and a dash of Worcestershire sauce to approximate the V-8 taste). Top with parsley. Cover and bake 50 minutes at 425 to 450 degrees. Uncover and bake 10 minutes more to brown. Makes 4 servings. A good one dish meal. |
