KIM'S HEALTHY ZUCCHINI PIZZA 
ZUCCHINI PIZZA CRUST:

6 eggs
3 cups shredded zucchini
1 cup all-purpose flour (I use 1/4 cup soy and 3/4 cup whole wheat)
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
dash pepper
garlic powder, to taste (optional)

SUGGESTED TOPPINGS:

pizza sauce (I use Don Pepino)
toppings (pepperoni, sliced green peppers, tomato, etc.)
shredded cheese (I use mozzarella)

Preheat oven to 450°F.

Beat eggs (can use blender). Add all remaining ingredients and mix well. Pour onto greased 14-inch pizza pan.

Bake in hot (450°F) oven for 8 minutes or until set.

Remove from oven and drop temperature to 350°F. Spread your favorite pizza sauce over top, sprinkle with favorite toppings, add cheese.

Bake at 350°F for 10 minutes or until cheese is melted.

Slice and enjoy a slice of healthy heaven!
