IMPOSSIBLE COCONUT PIE 
1 1/2 c. sugar
1/2 c. self-rising flour
4 eggs, well beaten
1 stick butter
2 c. milk
1 tbsp. vanilla
1 (7 oz.) can or 1 1/2 c. coconut

Combine all ingredients. Pour into 2 well buttered 9 inch pie pans or 1 large deep glass pan. Bake 30-40 minutes at 350 degrees. No pie crust needed.
