80 BUNS | |
4 c. boiling water 2 tsp. salt 2 c. sugar 1 c. lard (or 1 1/2 c. Crisco) 2 pkg. dry yeast (dissolved in 1 c. warm water) 3 eggs 17 c. flour Boil the water, salt and sugar 5 minutes. Add lard and cool. Add 4 cups flour and stir. Add the yeast and eggs. Add the rest of the flour gradually. Knead in the bowl; the dough will be quite soft. Grease bowl and grease top of the dough. Cover with a cloth and rise until double. Shape into buns. Cut a small amount off the dough, work it and shape into a small ball; or you may roll the dough and cut out. Place on greased cookie sheets and rise overnight. Bake 10-15 minutes in 400 degree oven. These can be made without the overnight rise; however, they should be let to rise on the pans for quite long. |
