PINEAPPLE SOUFFLE 
1 can crushed pineapple (#2 can)
2 eggs
1/2 c. sugar
5 slices white bread
3/4 stick of butter
2 tbsp. flour
Pinch of salt

Cut bread into small pieces and brown in butter. Mix flour, pineapple, sugar and salt. Add well beaten eggs. Pour mixture into greased glass baking dish (7 x 11 inches). Put browned, buttered bread on top of pineapple mixture. Bake at 350 degrees for 25 to 30 minutes. (Double recipe for a 9 x 13 inch pan.)
