GINGER'S BAKED POTATO IN A BOWL 
potatoes
1 to 2 sticks butter
2 c. milk
16 oz. sour cream
bunch of green onions
4 to 8 oz. shredded cheese
bacon (optional)
salt and pepper
garlic powder (optional)

Peel and chop approximately 12 potatoes. Put them in a large pot with enough water to barely cover them. Do not put too much water in the pot. Chop green onions. Add 2 teaspoons of salt and pepper. If available, add 1 teaspoon of garlic powder. Add half of the green onions. Bring to a boil. Cook the bacon until crisp and chop. Reduce heat to medium and mash potatoes in pot once they are soft. Add butter, 1 cup milk and 8 ounces sour cream and stir.

For thicken soup, do not add the other cup of milk. Do add the other 8 ounce of sour cream. When soup is finished, add the remainder of the green onions, bacon and cheese. Add salt and pepper as necessary. Serve.
