SAUSAGE - STUFFED ONIONS 
8 med. sized red onions
3 tbsp. butter, melted
3 precooked sausage links, sliced
1 c. packaged herb stuffing mix
2 tbsp. parsley

Peel onions. Remove 1 or 2 outer layers. With a sharp knife or apple corer, scoop out onions to make a deep cavity in each. Finely chop enough of the removed onion to make 1/4 cup.

In a small bowl, toss stuffing mix with 1/4 cup chopped onion, butter, parsley and sliced sausage. Fill each onion cavity with about 2 tablespoons of mixture, packing well. Place onions in greased baking dish, cover with aluminum foil and seal well. Bake at 350 degrees for 1-1 1/2 hours or until onions are crisp tender.

These can be done on a Bar-B-Q. Wrap each onion in a square of foil seal well. Roast on grill 3 to 4 inches from coals for 50-60 minutes, turning occasionally. Serves 8.
