KUGELI (POTATO PUDDING) 
4 lb. white potatoes
1 med. onion
1/2 lb. bacon
6 eggs
1 (5 oz.) can evaporated milk
1 c. reg. milk
Salt and pepper to taste

Peel and grate fine the potatoes and onions. Cut bacon into small pieces and fry until crisp. Pour both fat over the potatoes-onion mixture. Beat eggs and add to potatoes. Add the evaporated milk and the regular milk, then the salt and pepper. Stir well.

Pour mixture into a greased pan. (The potato mixture should be no less than 2 1/2 inches in pan.) Bake at 450 degrees for 15 minutes then lower heat to 375 degrees and bake an additional 45 minutes or until crispy brown and firm. (The mixture will puff up as it bakes.) Cut into squares or wedges to serve and top with sour cream.

My italian mother made this quite often and mastered it. My lithuanian father was never fond of it being his mother never made kugeli. While nannys potato pierogis were to die for I am sure mammas kugeli gave nanny some competition. I can't see how anybody who loves potato pancakes with a hint of bacon wouldn't love this dish.
