SWEDISH APPLECAKE 
1/2 c. butter
2 eggs
1/2 tsp. vanilla
1/2 tsp. lemon extract
1/4 tsp. nutmeg
Sweetened whipped cream or vanilla ice cream
1 c. sugar
1 c. flour
1/2 tsp. salt
3 lg. Golden Delicious apples, peeled & cut into 1/4" thick slices

With electric beater mix together butter and 3/4 cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in flour, vanilla, salt and lemon extract. Spread batter evenly over bottom of greased 8 inch cake pan with removable bottom, or springform pan with removable sides.

Overlap apple slices in a spiral pattern to cover batter and then repeat with a second layer of apples, using all of apples. Stir together remaining 1/4 cup sugar and nutmeg; sprinkle evenly over apple slices.

Bake at 350 degrees for 1 hour and 15 minutes or until pick inserted in center comes out clean. Cool on rack for 5 minutes. Remove pan sides.
