FRESH COCONUT CAKE 
3 sticks butter
3 c. sugar
6 eggs
3 c. flour
1/2 tsp. salt
1/4 tsp. baking soda
1 c. sour cream
1 tsp. vanilla
1 pkg. fresh or frozen coconut

Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Sift flour, salt and soda together; add alternately with sour cream. Add vanilla and coconut, beat 2 minutes. Bake in tube pan that has been greased and floured. Bake at 300 degrees for 1 1/2 to 2 hours. This cake freezes well.
