SPINACH BREAD 
1 box chopped spinach, cooked & drained
1/4 c. butter
1/2 c. onions, chopped
4 (6 oz.) Velveeta, cubed
1 loaf French bread, halved & sliced 1 1/2 inches wide
1 lg. pkg. Mozzarella cheese slices

Saute onions in butter until wilted. Add well-drained spinach and Velveeta until melted. Place cut French bread on cookie sheet and spread spinach mixture on each piece. Place cut cheese slices on top of each piece. Place under broiler until bubbly and golden brown. Serve warm.
