SAVE YOUR LETTUCE SOUP 
5 whole scallions or 1 med. onion, chopped
2-3 tbsp. butter
2-3 celery stalks, chopped
3 c. shredded lettuce
4 c. chicken or beef broth
3 tbsp. fresh parsley
Salt and pepper to taste

Saute scallions and onions in butter. Add celery and lettuce and cook just until limp. Add broth, salt and pepper. Bring to a boil. Sprinkle with parsley. Serve hot.
