SEAFOOD-BROCCOLI BISQUE | |
1/4 lb. shrimp, shelled and cleaned 4 tbsp. butter 3/4 c. chopped onion 1 c. chopped fresh mushrooms 1 c. chopped fresh broccoli flowerets 1/4 c. flour 1 tsp. marjoram 1/4 tsp. thyme 1/4 tsp. nutmeg Dash of pepper 1/8 tsp. salt 1 1/2 c. chicken broth 1 c. light cream 1/2 c. shredded Swiss cheese 1 (6 1/2 oz.) can minced clams, undrained In saucepan, simmer shrimp in 2 cups water until pink, drain and dice. Reserve 1 cup cooking liquid. Melt butter in saucepan, add onion, mushrooms and broccoli. Cook until almost tender. Stir in flour, marjoram, thyme, nutmeg, pepper and salt. Add reserved liquid, chicken broth and cream. Cook and stir until thick. Simmer 2-3 minutes. Add cheese, clams and liquid, and shrimp. Stir until hot and cheese melts. Serve. |
